Pad Krapow.
Sometimes I'm really in the mood for some Thaïs food. Because it has a lot of flavours, the smell is delicious as well and it tastes amazing. Last week I was in such a mood. So, I made some Pad Krapow. It's very easy and quick to make.
Ingredients: (4 persons).
- 4 Tablespoons of sunflower oil.
- 3 finely chopped chilies.
- 3 Shallots, chopped in thin rings.
- 5 Gloves of Garlic (also chopped finely).
- 1 Carrot.
- 1 Bell pepper.
- Handfull of green beans.
- Handfull of mushrooms.
- 500gr Minced chicken.
- 2 Tablespoons of sugar.
- 2 Tablespoons of soy souce.
- 1 Tablespoon of fish sauce.
- 80-100ml of chicken broth water.
- 1 Bunch of Thaïs basil.
- Boiled noodles (or rice) for serving.
Step 1.
Chop all the vegetables into pieces.
Step 2.
Heat a wok (until it's very hot), add the oil and when it's hot add all the vegetables, chillies, shallots and garlic to the pan. Cook until soft and golden brown (make sure that they don't burn).
Step 3.
Add the minced chicken and fry it in a few minutes.
Step 4.
Add the sugar, soy sauce and fish sauce in the wok and cook for another minute. Then deglaze the pan with the stock (or water). Wait until the moisture has evaporated a bit (this should go quite quickly because your wok is very hot).
Step 5.
Add the Thai basil and stir until it has shrunk.
Step 6.
Serve with noodles or rice.
